Ingredients
- 3/4 cup plain flour
- 2 tablespoons cajun seasoning
- 1/2 teaspoon cayenne pepper (or more if you like it spicy!)
- 2 teaspoons caster sugar
- 2 eggs
- 600g (about 2 large) chicken breast fillets cut into 1.5cm pieces
- 1.5 litres vegetable or canola oil

Instructions
- Combine flour, seasoning, cayenne pepper and sugar in a medium bowl. Season with salt. Whisk eggs in a medium bowl until combined. Place chicken in egg mixture and toss to coat. Coat chicken pieces, in batches, in flour mixture.
- Heat oil in a large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry chicken, in batches, for 4-5 minutes or until golden and cooked through. Using a slotted spoon, transfer to paper towels.
- Serve immediately with your favourite dipping sauce.
Recipe Notes
tipS: You could make this recipe using peeled green prawns for a simple twist. If serving this as an appetiser it will serve 6-8 people, depending on what else you are serving.
