These go well with almost anything – grilled or roasted meats, sandwiches, burgers, schnitzels and even tossed into a salad with feta and walnuts. I like serving them with my Cajun chicken & bacon burger. Give both a go!

- 750 grams orange sweet potato (kumara) cut into wedges
- 2 tablespoons olive oil
- pinch cayenne pepper (optional)

Instructions
- Preheat oven to 220C/200C fan-forced. Place wedges on a baking paper lined baking tray. Drizzle with oil and toss to coat. Spread wedges out so that they are in a single layer. Sprinkle with cayenne pepper (if you are using). Season with salt and pepper.
- Bake for 35 minutes or until golden and tender. Serve.
Recipe Notes
Try sprinkling wedges with finely chopped rosemary and thyme before baking for a simple herby twist. Chilli flakes and a spicy kick or cumin and chopped fresh coriander for a simple middle eastern feel.
